Cheesy Chicken Banting Casserole

This recipe has 10g of carbs which is a little high for a banting meal, but fully within the limits, however everything else is banting-tastic. If you're trying to lose weight, it's recommended to eat 50 g of carbs or less a day. I usually pair this meal with avo because it is a very rich taste. The combination of the two make this dish really fill and really delicious!


4 Chicken breasts
1 packet of Old El Paso taco seasoning
1 jar of Old El Paso mild salsa (if you like it hot, have it hot)
1 small green chilli (remove seeds and don't lick your finger after cutting..ask me how I know)
250 mls sour cream
2 cups of cheddar cheese grated


Cut and cook the chicken.
Once cooked, drain and add the taco seasoning, mix in.
Add chicken to oven dish
Combine the salsa, sour cream and cut up chili together
Add the mixture to the chicken

Cook at 180 degrees for 30 minutes
Put on the grill
Add the cheese over the bake
Grill until the cheese is bubbling and nice layer has formed

Take out the oven, let it rest for 10 minutes

At this time I cut open an avo and eat it with the dish to break the richness.

The nutrition facts don't include the avo so take the extra fat etc into account.
