Choc Chip Cookies

This is a great little recipe to make with kids or just to have a tin around the house or when the mood strikes. I find with this particular recipe, it takes a little longer in the oven. So count on 15-20 minutes per batch.


250 g granulated white sugar
300 g plain white flour
200g butter
1 tsp vanilla extract
1 tsp baking powder
A pinch of salt
1 egg
Chocolate chip. Use as much as you like. I like to add about 1 cup

Preheat your oven to 160 degrees




(The steps in baking cookies is very important)
1. Combine the white sugar and butter. Mix in very well.
2. Sift the flour, baking powder, salt in the butter mixture and mix together.
3. Add vanilla extract and the egg and mix until combined. You might want to use your hands for this.
4. Line your baking tray with baking paper.
5. Take about 1 1/2 table spoons of mixture into your hands and roll into a ball.
6. Place ball on the baking tray and push down slightly. This will ensure constant shape throughout the batch.
7. Bake for 15-20 minutes or until the cookies brown slightly.
8. Place on wire rack for the cookies to cool down.

I also found that if you melt a little baking chocolate or even some of the chocolate chips and then dipped the cooled cookies into the mixture and left to cool again on the wire rack, it makes a nice little varient to the recipe.
