Gelatin!
To be honest, I've never given much thought to jelly other than the strawberry box that you mix with water. But as we get older, it seems the simple desert needs a little update. I've seen boxes of granulated gelatin or the strips of gelatin that you melt into cold water at the store but never thought more about it. Then I came across a recipe that called for gelatin and now my creative juices are flowing with possibility! What about jelly cups with hazelnut liquor, or a pink drink jelly! ;)So here's the first in probably a long line of gelatin recipes I will be trying, not an alcoholic one but I will be trying a few over the next couple of days.
Cappuccino and cream jelly:
500 mls of strong coffee, preferably espresso but not everyone likes strong coffee
110g granulated white sugar
3 tbs gelatin powder (the boxes you buy that come in sachets should be 3 tbs)
1 tbs icing sugar
80 ml cream
Cocoa to decorate
Make the coffee that you're using hot so that the sugar and gelatin dissolve properly.
Add the sugar and gelatin powder into the coffee.
Stir until dissolved.
Pour the mixture into your serving dishes. I went with espresso mugs.
Cover the mugs with cling wrap and refrigerate for about 4 hours or until set.
Whip your cream and icing sugar together until stiff and decorate your jellies with the cream.
Sprinkle a little cocoa powder to decorate (or chocolate would work well).
