Awesome vanilla cupcakes

I love this cupcake recipe! It's easy and always tastes awesome. These are vanilla cupcakes and vanilla buttercream frosting. I added colouring to the frosting because white is a little boring :)

12 cupcakes:

115 g softened butter
115 g caster sugar
115 g self raising flour
1 tbsp milk
2 eggs
1 tsp vanilla extract

Buttercream frosting:

150 g unsalted butter
1 tsp vanilla extract
280 g icing sugar
2 tbsp milk


Preheat your oven to 180 degrees.
Add the butter and caster sugar in a bowl and mix together until creamed (light and fluffy).
Mix the eggs together, and then add into the creamed mixture.
Add vanilla extract and mix in well. (yes another vanilla extract recipe!)
Sieve the flour into the mixture and mix in well.
Finally add the milk.

You want to mix the batter pretty well but not so much that caused the gluten in the flour to react prematurely because then the cupcakes will be dense and not soft and fluffy light you want.

Spoon the mixture between the 12 cupcake cases.

In the preheated oven, make sure the self is in the middle of the oven.
Bake the cupcakes for 15-20 minutes. I found with my oven it was exactly 15 minutes. You basically want them to be lightly brown.

Remove them from the oven and place on a cooling rack.

Buttercream:

Combine the butter and vanilla extract with an electric beater until soft and pale.
Gradually sift in the icing sugar. You don't want to put it all in at once because it won't turn out light and fluffy.
Once all the icing sugar is combined ass in the milk so it's soft and easier to pipe and decorate.

If you want to change the colour of the frosting, gradually add in small amounts of food colouring until it reaches the colour you desire.
